You've been drinking orange pekoe tea for decades and you've decided to step outside your comfort zone and try something new. With all the talk about the benefits of green tea, it makes sense to try something completely different, but you aren't quite sure how to go about brewing Chinese tea. Aren't there ceremonies involved? Do you brew it as long as you brew your orange pekoe? What you need is a how to guide for people who don't know anything about Chinese tea.

The truth is that talking about "Chinese tea" is something of a misnomer. China covers an enormous area, and different provinces each have their own unique tea styles, just as they have their own unique cuisines. Fujian, for instance, is a province on the southeastern coast of China with a climate that makes it well-known as a tea-producing region, while Yunnan, landlocked on the southernmost tip of China, is rumored to be one of the first places tea was used. If you're looking for a specific kind of tea, like black tea, you can certainly find a style that comes from China. If you're just looking for "Chinese tea," however, a great way to learn would be to taste teas by the region where they're produced, to get a feel for what kinds of flavors are native to those areas.
